peanut-butter-cookiesWho doesn’t love home baked cookies?  With this recipe, you can enjoy delish peanut butter cookies that are vegan (animal friendly!) and easy!

Easy Vegan Peanut Butter Cookies

Oven 350 degrees F

Makes about 24 cookies



  • 1 cup organic peanut butter*
  • 2 cups organic flour**
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt (fine)
  • 1/2 cup very cold vegan margarine (I use Earth balance)
  • 1/2 cup organic granulated sugar
  • 1/3 cup organic brown sugar
  • 1 tablespoon ground flax seeds
  • 3 tablespoons filtered water
  • 1 teaspoon real vanilla extract

1.) In a small bowl, add flax seed and water, stir and let set.

2.) In large bowl, mix vegan margarine with brown and white sugar.  Use electric mixer for best results.    “Cream” the margarine and sugars until fluffy and everything is combined.

3.) Add the flax mixture and vanilla and mix another couple of minutes.

4.) Add peanut butter and mix until everything is thoroughly incorporated.

5.) In a separate bowl, combine the flour, baking soda and salt and mix with spoon.

6.) Pour flour mixture into the bowl with the peanut butter and mix until all ingredients are combined.

7.) Cover the bowl and refrigerate for about 20-30 minutes.

8.) Now turn on the oven to 350 degrees F. and get out 2 cookie pans or baking stones.  If using the cookie sheets/pans, line them with parchment paper (for easy cleanup and better cookies).

9.)  When cookie dough is chilled and oven is at 350 F,  take the dough from the fridge.

10.) Take about a tablespoon of dough and roll this between your palms into a ball.

11.) Place each ball of dough on the cookie sheet about 1 1/2 inches from each other cookie ball.

12.) Dip a fork into a small bowl of cold water and press down ball with tines of fork twice, horizontally and then vertically to form a criss cross pattern. Repeat for each cookie. You should be able to fit about a dozen cookies on each sheet or baking stone.

13.) Bake about 10-13 minutes until golden brown.

14.) Take out of oven and allow cookies to cool about 10 minutes and then transfer to cooling rack.

15.) Now the fun part!  Enjoy these yumilicious cookies with a glass of cold almond milk!  Ummmmm!  Your home will smell divine!

* I have used almond butter and sunflower seed butter and also a mix of all three

** You can substitute gluten free flour if you wish, but it might make cookies more crumbly
